Garlic scapes are the greens that grow out of planted garlic bulbs. You may be able to find these at local farmers markets They make a delicious and easy pesto. Equal amounts of scapes(or green garlic). parmesan, and olive oil. Process in blender or food processor. You'll be hooked!
